Dried ginger is fresh ginger which has undergone a drying process. The fresh ginger is soaked in water overnight after which the outer peel is carefully removed and dried.

It is mainly used as a key ingredient in most of the masalas like garam masala, chai ka masala (Tea masala), chole masala, etc. It is also used in varieties of chutneys or sauces.
